Vegan Oatmeal Pancakes {gluten-free}

heard me rave about her Vegan Chocolate Chip Cookies – and I’ve got many of my friends hooked on them as well (and none of them are vegan). So
naturally, I went to her when I was looking for a gluten-free pancake recipe that doesn’t taste like bananas! Praise Him.
RECIPE (from Making Thyme for Health):
1/2 cup unsweetened unflavored applesauce
3/4 cup plant milk (I used oat)
1 tbsp apple cider vinegar
1 tbsp vanilla extract
2 tbsp maple syrup (plus more for drizzling)
2 cups rolled oats
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 tbsp coconut oil, melted
METHOD:
In the order of the ingredients listed, pour everything into a blender. I use a Vitamix.
Grease a non-stick skillet (I like to use coconut oil spray) and heat over medium to medium low heat.
Spoon the batter into the skillet. My batter is always super thick (and it thickens as it sits), so I use an ice cream scoop.
Cook the first side until the edges are firm and there are bubbles in the middle.
Flip and cook the second side for another minute.
