Chocolate Protein Pancakes {gluten-free & dairy-free}

Protein shake? Ehhhhh … not my favorite. I never knew that I could identify the SMELL of protein, but yah. Add that to my list of talents.

Fortunately, I found this amazing recipe by Pinch of Yum that allows me to enjoy my food while also getting in that extra protein!

RECIPE (adapted from Pinch of Yum):

1 cup oats

1 banana

2 eggs

1/2 cup egg whites

4 tsp baking powder

Pinch of salt

Pinch of cinnamon

1-2 scoops protein powder (I use Garden of Life Chocolate Protein Powder)

2 tbsp flax meal

1 tbsp cacao powder (for extra chocolatey-ness)

METHOD:

Put all of the ingredients into a blender and blend (I use a Vitamix). My batter always turns out quite thick unlike hers, which looks more liquid-y.

Heat a nonstick pan on medium to medium-low heat. Grease it with cooking oil spray (I like coconut oil).

Using an ice cream scoop, scoop the batter onto the pan and cook as you would normal pancakes.

If your batter isn’t thick, you can just pour it out of the blender onto the pan.
