Pitaya Smoothie Bowl
When I first saw this on Earthy Andy’s Instagram page, my eyes got super wide. “What was this bright pink gorgeousness??? I NEED to try and make
it!!!” Turns out, it’s such a simple thing – the only possible deterrent was finding pink pitaya. Fortunately, they had it frozen and ready to go at my local
health food store. I first made it for my kids, who were just as wide-eyed about the color, and they still request it today.
RECIPE (adapted from Earthy Andy):
1 frozen pink pitaya packet
1-2 frozen bananas*
1 cube frozen coconut milk**
Water
METHOD:
Add all ingredients in a high-powered blender. I start with 1/4 cup of water to help get it going, but use as little as possible to get it that thick, ice-cream
consistency.
The frozen bananas will give it an extremely creamy texture. If you want to drink this as a smoothie, use fresh bananas.
Top it with whatever you like!
*People say to use over-ripened bananas for banana bread. I freeze mine for smoothies because I don’t like banana bread.
**Freeze leftover canned coconut milk in an ice cube tray!
